This summer I decided to indulge in the beauty of yummy salads.
For the past few years I have ordered my groceries from Fresh Direct but recently, a new Whole Foods-style organic market opened near my neighborhood. I went in to check it out and the food looked so beautiful, the fruits and veggies in particular that I started picking things up and had a basket full of groceries before I knew it!
I had to learn to shop in a supermarket again after basically checking off food from a website. Shopping in a supermarket is such a visceral experience. And this will sound ridiculous, but I was astounded at how much cheaper the food was — even though it was organic.
My favorite thing about a salad is that you can add almost anything you enjoy to leaves and you’ve got a meal! I prefer to use baby spinach raw instead of lettuce so that I can get more nutritional value. Balsamic vinegar is my favorite dressing although I sometimes just use fresh lemon juice so that I can taste all of the flavors of the salad. Nuts and fresh fruits of the season are also a good edition. I usually add chicken or fish to my salads but do what works for you.
These salads are not side dishes at all. They are the main course!
Sexy Summer Salad #1
Ingredients: Baby Spinach, Sliced Plums, Lemon Essence, Chick Peas, Corn. Walnuts would also be great with this salad.

Ingredients: Baby Spinach, Crumbled Pepperjack Cheese, Boiled Eggs, Pitted Black Olives with Coconut Water.

Ingredients: Baby Spinach, Corn, Channa / Chick Peas, Salmon Cake, Lemon Zest, Red Pepper.

Ingredients: Pitted Black Olives, Baby Spinach, Baby Carrots, Salmon Cake, Lemon Essence, Balsamic Vinegar — and Coconut Water for a refreshing beverage.
